Each whisky distillery has a place in the market and an obligation to fulfil the flavour profile their brand is committed to yielding. But in the spaces that lie between signature flavours, whisky makers push the boundaries with the tastes they seek to create, sometimes producing extraordinary casks that can’t be released by their distillery.

For a Scottish or Australian whisky to wear the Truth and Consequence label, it must meet a strict criteria. Its provenance must be impeccable. Its DNA must be of the highest calibre. Its journey must be transparently documented. And above all it must be a whisky that cask-strength connoisseurs must absolutely adore.
Every time we do a whisky & chocolate pairing with him, attendees rave about the evening - so joining us once again is Peter Channels from Jasper+Myrtle with a small selection of their spectacular chocolates - with one carefully paired chocolate to accompany each whisky in the lineup.
Jasper+Myrtle hand craft their chocolate in their shop on Dairy Road in Fyshwick, and are fast becoming a Canberra institution! They ethically source their cocoa beans, creating lasting long-term relationships with the farmers that grow them - with Peter and his partner Li Peng regularly visiting the farms to get to know not just the product, but the people too.
Jasper+Myrtle chocolates contain no artificial colours, flavours, or preservatives - with all the various flavours coming from natural ingredients.

Jim McEwan's answer to critic who claimed Bruichladdich didn't make peated whisky beacuse they didn't have the skills to do it well. With "heavily peated" whisky starting at 30ppm, we'll just call Octomore's 80-308ppm "super heavily peated".
Octomore's young and cask strength spirit should be as current master distiller Adam Hannet has joked, Bruichladdich's most undrinkable whisky: "It’s too young, too strong and too peaty." Also known as "The impossible equation"; an equation that the Bruichladdich Distillery has mastered.

We've got a great selection of flights planned for the near future, with destinations including some favourite distilleries from Islay, and Speyside, in Scotland; a tour of Irish single casks, a meandering tour across Europe and Scandinavia, and some stunning sights from the United States of America.
We will also be taking off for some domestic destinations, where stories abound of the hard yakka that goes into setting up some of The New World's most loved distilleries - where we will try some of the boldest, meatiest, whiskies that have been slumbering away on this sunburnt country of ours!
Make sure your luggage is securely stowed, and your seatbelts are done up low and tight folks - some of these flights will be like none that have ever graced this beautiful capital of ours!
